Vintage K C Seelbach 10.25” Chef Knife Carbon Steel Rosewood Solingen, Germany 1950 70 Restored Vintage Ashi Hamono 150mm honesuki kaku To stay out of Ashi Hamono 150mm honesuki kaku with a carbon steel blade and western style riveted pakka wood handle but is otherwise very secure Blade has a bit of flexibility at the tip 1 3 and has a great lively feel Blade was a bit thick behind the edge from sharpenings and has been thinned and brought back to what would be similar to original geometry although it is a hair thinner than original grinds I have found from this maker
