K Sabatier Auvergne 3" Paring Stainless Softgood hardened to approx 63 HRC To stay out of hardened to approx 63 HRC as these do better kept with a coarser edge (equivalent to Japanese 1000 grit stone) and kept up with a fine honing steel more similar to some of the old German knives K Sabatier’s ‘Auvergne’ series are drop forged from a single piece of Z50C13 stainless steel They are ground thin behind the edge for great cutting feel and ease of sharpening
